Asian Black Bean Soup

Asian black beans soup is considered to have ‘warming’ properties in Asian food therapy, and is loaded with nutrients.  Dried beans, in general, are rich in calcium, iron, phosphorus, dietary fibre and protein.

These are all essential elements for building energy and contributing to healthy growth. As well, these nutrients help us maintain and repair body tissues, cells and muscles.

Black beans, in particular, have been found in a research study to contain the highest level of anti-oxidant activity. Followed in descending order by red, brown, yellow and white beans.

In this same study, black beans were found to be as rich in anti-oxidant compounds called anthocyanins as grapes and cranberries.

In addition this soup adds healing mushroom powders to enhance immunity and rejuvinative properties.

INGREDIENTS

4 servings
1 tbsp olive oil
1 medium onion chopped
3 cloves garlic minced
2 medium carrots chopped
1 medium bell pepper cored, seeded and diced
1 cup tomato puree
4 cups vegetable stock
3 cups cooked black turtle beans
1/2 tsp red pepper flakes
pink salt and pepper to taste
optional: (add 1 cup cooked volcano rice.)

DIRECTIONS

40 minutes
1. Heat the oil in a large pot and sauté garlic and onion for 3 minutes or until soft.
2. Add the bell pepper, carrots and sauté for 2 minutes.
3. Add the tomato puree, black beans and stock to the pot and bring to a boil.
4. Reduce the heat and simmer covered for 30 mins.
5. Add Zura Mushroom powder blend and stir to blend.
5. Add the red pepper flakes and season with salt and pepper to taste.
